There are plenty of romantic restaurants to visit when you’re staying at San Clemente Cove, but sometimes the most romantic thing you can do is create a homemade meal for your significant other. Luckily, all of our rooms have kitchens and cooking utensils so you can cook, bake, and create a romantic dinner for Valentine’s Day, date night, or just because!
3 Course Easy Romantic Dinner Menu
Course 1: Easy Swiss Cheese Fondue
Ingredients
¾ cups white wine (save the rest to drink!)
1 tbs. corn starch
16 ounces of good shredded Swiss cheese
Pinch of salt
Food to dip (bread, apple slices, roasted broccoli, etc.)
Instructions
Whisk ½ cup wine with the cornstarch, and heat over medium/low heat until thick and bubbling. If it gets too thick, add a splash more of wine.
Add cheese a ½ cup at a time, and whisk the mixture until the cheese is completely melted and incorporated. If it seems too tight or elastic, add more wine. Repeat this process until all cheese has been added.
Season with salt and serve immediately!
Course 2: Chicken Pot Pie
Ingredients
1 Rotisserie Chicken, deboned and shredded
1 bag frozen mixed vegetables (carrots, peas, onion, corn)
2 tablespoons olive oil
¼ cup all-purpose flour
½ cup butter (1 stick)
1 16 ounce can chicken stock
1 pint heavy cream
Fresh thyme
Salt and Pepper to taste
Frozen pie crust
Instructions
Preheat oven to 350 degrees F.
Thaw your pie crust and set aside.
On medium heat, add the olive oil and frozen vegetables. Cook until soft and tender, or to your desired cooked level. Remove from the pan.
Create your rue: add the stick of butter and ¼ cup flour to your pan, and whisk until a light golden brown. Once your rue is ready, add in the can of chicken stock and whisk constantly to prevent lumps.
After the stock is completely mixed in, add in your vegetables and chicken and stir to combine. Add in thyme, salt and pepper to taste, followed by your heavy cream.
Pour ingredients into an oven safe dish, and allow to cool slightly. Once the ingredients have cooled slightly, place the pie crust on top and brush with olive oil.
Put your dish into the oven and bake for approximately 30 minutes, or until the pie crust is slightly golden brown.
Let cool for about 5-10 minutes, then enjoy!
Course 3: Chocolate Covered Strawberries
Ingredients
10 fresh strawberries
1 12 ounce bag dark chocolate chips
1 pint heavy cream
Instructions
Warm the heavy cream in the microwave for 1.5 – 2 minutes, or until hot. Remove from microwave and add in chocolate chips. Allow to sit for 5 minutes, then whisk together until chocolate chips are completely melted.
Dunk strawberries into chocolate mixture one at a time, and place on wax paper until chocolate is set.
Once chocolate is set, enjoy with your loved one!
